Producer Profile
Based in the heart of the Languedoc in Lezignan-Corbières, Domaines Auriol is a family-owned winery set up in 1995 by the formidable Claude Vialade. As the daughter of a former wine estate manager, wine has always been second nature to Claude from early days where she would follow her father around the vineyards as a child to becoming the Director of the AOC Corbières Syndicate. Today Domaines Auriol is a producer as well as a négociant who prides itself in its Occitan roots. Their Estates and Family brands are great examples of the best wines this part of the Languedoc has to offer.
Viticulture
Significant tillage is applied for the conduct in Organic Agriculture. Harvesting is done at moderate maturity, in order to keep an approach modern of this typical grape variety.
Winemaking
A small pellicular maceration is done at low temperature. Fermentation takes place between 14° and
16°C to enhance the flavours of Viognier. This allows to highlight the fat of the Viognier, which is compensated by the freshness brought by a good control of the harvest. Aging on lees is carried out to provide the aromatic complexity to the wine.
