Producer Profile
Based in the heart of the Languedoc in Lezignan-Corbières, Domaines Auriol is a family-owned winery set up in 1995 by the formidable Claude Vialade. As the daughter of a former wine estate manager, wine has always been second nature to Claude from early days where she would follow her father around the vineyards as a child to becoming the Director of the AOC Corbières Syndicate. Today Domaines Auriol is a producer as well as a négociant who prides itself in its Occitan roots. Their Estates and Family brands are great examples of the best wines this part of the Languedoc has to offer.
Viticulture
Cultivation according to Agriculture specifications Biological. Management of the vine on wire. The plots are harvested mechanically, certain parcels resulting from rigorous selections are manually harvested. The yield is 70hl/ha.
Winemaking
Maturity tests decide the date of the harvest. Destemming and short pellicular maceration. A slight yeasting at the beginning of fermentation allows a beautiful aromatic extraction. Settling juice is made at 7°C. Fermentation takes place with regular control temperatures. Part of the juice is vinified with staves of French oak to develop the spicy and toasty notes.
