Producer Profile

Based in the heart of the Languedoc in Lezignan-Corbières, Domaines Auriol is a family-owned winery set up in 1995 by the formidable Claude Vialade. As the daughter of a former wine estate manager, wine has always been second nature to Claude from early days where she would follow her father around the vineyards as a child to becoming the Director of the AOC Corbières Syndicate. Today Domaines Auriol is a  producer as well as a négociant who prides itself in its Occitan roots. Their Estates and Family brands are great examples of the best wines this part of the Languedoc has to offer.

Winemaking

The grapes are delicately loaded into the press by gravity. The pressing is slow and the must is clarified at low temperatures. After settling, the must is barreled into barrels by gravity. The proportion of new barrels is 20% and 80% of 1 wine and 2 wines. The alcoholic and malolactic fermentations take place in barrels and aging on fine lees is punctuated by regular stirring until month of June following the harvest. The Limoux appellation has the the most restrictive production conditions of all the appellations of French wines. Manual harvesting, vinification and aging in wooden containers are mandatory. Wines cannot be put on the market only from the month of May following the harvest, i.e. 8 months minimum.
